My Damascus is made using 80CrV2 and 15N20. The Vanadium in the 80CrV2 gives my Damascus extra toughness versus the majority using steels like 1080.
What this means for you is a blade that retains high hardness but won't chip out on you.

I look for a good balance between a workhorse and something fast and lean. This is why I also include weights on all my knives. If you want something faster look for a lighter chef, something with a bit more weight will have more of a workhorse grind.
